Butterbean Bake

This is a dish which I make when I want something quick and nourishing. E

Cooking time: 15 – 30 minutes

Meal for two

Ingredients:

1 onion

a tin of tomatoes

a tin of butterbeans

1/2 tsp paprika

2 large potatoes, mashed

vegetable oil

Method:

  1. Fry the onion in the vegetable oil.
  2. Add the tomatoes and butterbeans to the pan and cook on medium heat until heated through.
  3. Add paprika.
  4. Top with mashed potato and grill until golden brown.

I like to top this with grated cheese and serve with a green vegetable. Sometimes I use chilli powder instead of paprika. Additional cooked/left over vegetables can be added with the butterbeans.
