This is a favourite of my parents as an alternative to a proper roast in summer. Crispy skin on the chicken thighs is just the best. G.
Cooking time: 1 hr
Meal for one
2 chicken thigh pieces
2 tomatoes, quartered
1/4 orange pepper (red and yellow work too), sliced
1/2 onion, sliced
- Preheat the oven to 200C.
- Place all the vegetables in the bottom of an ovenproof dish.
- Rub the paprika and chilli powder into the chicken thighs and place on top of the vegetables.
- Sprinkle with salt and drizzle the olive oil over the chicken and put in the oven for 50 mins to an hour, until the chicken skin is crisp.
I usually eat this with couscous, or nestle some boiled potatoes between the chicken pieces.
