Mediterranean Roast Chicken

This is a favourite of my parents as an alternative to a proper roast in summer. Crispy skin on the chicken thighs is just the best.  G.

Cooking time: 1 hr

Meal for one


2 chicken thigh pieces

2 tomatoes, quartered

1/4 orange pepper (red and yellow work too), sliced

1/2 onion, sliced


chilli powder

olive oil



  1. Preheat the oven to 200C.
  2. Place all the vegetables in the bottom of an ovenproof dish.
  3. Rub the paprika and chilli powder into the chicken thighs and place on top of the vegetables.
  4. Sprinkle with salt and drizzle the olive oil over the chicken and put in the oven for 50 mins to an hour, until the chicken skin is crisp.

I usually eat this with couscous, or nestle some boiled potatoes between the chicken pieces.
