I made this as something more interesting for lunch, great if you’ve run out of bread for sandwiches or just want something to warm you up. G
Cooking Time: 15 mins
Meal for two
1 onion, sliced
1 carrot, roughly cubed
½ mug sweetcorn
1 tin chopped tomatoes
Small tin baked beans
Small chunk parmesan (optional)
Fajita seasoning (1 -2 spoons to taste)
½ vegetable stock cube
- Fry the onion and carrot in the bottom of a saucepan
- Stir in the stock cube and fajita seasoning.
- Add the beans, tomatoes and sweetcorn and simmer until the vegetables are cooked.
- Sprinkle generously with parmesan to serve.
I like this with garlic bread for dinner but its filling enough on its own for lunch.
