Bean and Potato Bake

I am a big fan of bakes,  the crispy cheese on top is so good and the beans make it a comfort food for the most relaxing of evenings. G

Meal for One


1 baking potato

5 sun-dried tomatoes, roughly chopped

1 1/2 tsp green pesto

1 small tin baked beans

1 small onion

2 tbsp breadcrumbs

Strong cheese (I go for Cheddar), grated




  1. Boil and mash the potato with a knob of butter.
  2. Fry the onions and sun-dried tomatoes, then add the beans and pesto and heat through.
  3. In an oven-proof dish layer up the potato, bean mixture and cheese, starting with the beans, then adding potato, then cheese, repeating until you’ve run out of potato.
  4. Top with a sprinkling of cheese and the  breadcrumbs, then bake in the oven until the top is crisp and golden.
