Muscovado Chocolate Chip Cookies

Warning: only share if you’re willing to lose them all. I took these to work and they were devoured! The muscovado sugar really comes through making these a little richer than the average cookie. This is definitely going to become a staple in my house. G.

Ingredients:

100g caster sugar

150g muscovado sugar

280g plain flour

115g butter

2 eggs

1tsp bicarbonate of soda

200g chocolate, chopped

 

Method:

  1. Mix together all the ingredients into a soft dough.
  2. Put spoonfuls of mixture onto a baking tray, well spaced (I generally manage 6 spoonfuls per tray)
  3. Bake for about 15 mins until golden at 200°C (Gas 4), then allow to cool.

Don’t worry if they’re a little soft when you take them out, they’ll solidify as they cool, so they should be softer than you want when you take them out the oven.
