These frittata are good when you need to create something fast from the storecupboard. I like them hot with crispy bacon and toast for breakfast with a drizzle of chilli sauce. They are also good cold in a baguette with salad; great for a picnic. E
a little cooking oil or butter
half a small tin of sweetcorn
dried chilli flakes (optional)
- Heat the oil or butter in a frying pan.
- Beat the eggs, sweetcorn and chilli flakes together in a bowl.
- Tip into the frying pan as if making a small pancake.
- Fry for a few minutes each side until set and starting to brown.
- Serve and enjoy.
