Sweetcorn frittata

These frittata are good when you need to create something fast from the storecupboard. I like them hot with crispy bacon and toast for breakfast with a drizzle of chilli sauce. They are also good cold in a baguette with salad; great for a picnic. E

Serves 1


a little cooking oil or butter
two eggs
half a small tin of sweetcorn
dried chilli flakes (optional)


  1. Heat the oil or butter in a frying pan.
  2. Beat the eggs, sweetcorn and chilli flakes together in a bowl.
  3. Tip into the frying pan as if making a small pancake.
  4. Fry for a few minutes each side until set and starting to brown.
  5. Serve and enjoy.
